Ghee adds a healthy dose of additional buttery flavor. I personally find monkfruit to be a tastier option when baking as opposed to stevia. However, for those with SIBO or an intolerance to FODMAPS, stevia or coconut sugar may be more tolerable.

Preparation

First things first, preheat your waffle iron. This is a crucial step you don’t want to skip! Preheating the iron ensures that your waffles cook evenly and have that perfect, crispy exterior. Once the waffle iron is preheated, spray it with some avocado oil. This helps prevent the waffles from sticking to the iron.

Making the Waffles

Begin by whisking the two eggs until they’re fluffy. This introduces air into the batter, which will make your waffles light and airy. Once the eggs are fluffy, add your choice of avocado oil, melted vegan butter, or ghee, along with the vanilla extract.

Now it’s time to add the remaining ingredients: the almond flour, sweetener, baking powder, and a pinch of salt. Stir these ingredients until they’re just combined. You want the batter to be thick and fluffy. Let the batter sit for about 5-10 minutes. This allows the almond flour to absorb all the moisture and creates a better texture for your waffles.

It’s important to note that you should not re-mix the batter after it has rested. If you do, you may end up with waffles that are dense and heavy, rather than light and fluffy.

Once the batter is ready, scoop it into your preheated waffle iron. Cook the waffles according to your waffle iron’s instructions. Every waffle iron is a bit different, so make sure to follow the manufacturer’s guidelines.
