6tbsp.gheeavocado oil or vegan butter for dairy-free

Instructions
Whisk eggs until fluffy. Add melted ghee or oil and vanilla.
Add remaning ingredients and stir until just combined. Batter should be thick and fluffy. Allow to sit for 5-10 minutes to allow almond flour to absorb all moisture. Do not re-mix.
Scoop batter into waffle iron and cook according to waffle-iron instructions.
Serve warm with sugar free maple syrup, additional cinnamon, grain-free granola, or coconut yogurt. Waffles may be re-heated in toaster.
