Ingredients
  

  • 1 cup almond flour
  • 2 eggs
  • 6 tbsp. ghee avocado oil or vegan butter for dairy-free
  • 4 tsp. granular monkfruit or stevia
  • 2 tsp baking powder
  • 1/2 tsp. vanilla extract
  • pinch salt

Instructions
 

  • Whisk eggs until fluffy. Add melted ghee or oil and vanilla.
  • Add remaning ingredients and stir until just combined. Batter should be thick and fluffy. Allow to sit for 5-10 minutes to allow almond flour to absorb all moisture. Do not re-mix.
  • Scoop batter into waffle iron and cook according to waffle-iron instructions.
  • Serve warm with sugar free maple syrup, additional cinnamon, grain-free granola, or coconut yogurt. Waffles may be re-heated in toaster.
